When we first began to make shave ice in early 2010, the method of shaving a block of ice to make authentic Hawaiian shave ice treats was not a new concept for us

"We remember the stories we learned while searching the islands for the best shave ice in Hawaii and to learn as much as we could about the history of hawaii, how in the early 1900's, huge ice blocks of ice were slid down on bamboo poles from the mountains of Hawaii to the foothills, this would take place in the winter, and those blocks of ice were stored in beachside caves called ‘Himuro’ which in Japanese and means ‘Ice room’".


The first Japanese immigrants arrived in Hawaii in 1885. On February 8, 1906 in Waikiki, about 900 Japanese immigrants arrived in Hawaii. The Japanese would quickly become one of the island kingdom's largest ethnic groups. Today, about 14% of Hawaii's population has Japanese ancestry, with a strong lineage to those original 900.

as the large ice blocks would begin to melt, they would reach a temperature state called tempered, they would use those long island type of blades, and thin shaves of ice were cut, or rather shaved from those blocks, and then toppings such as honey were added and consumed in somewhat secrecy, since at that time shave ice was reserved for royalty. Those stories are still alive today within the hu'i hu'i shave ice company. Authenticity is of key importance to Hui hui shave ice.

it's crazy to think that in the 1600's to late 1800's ice was considered rare and shave ice was a luxury, recognized as a treat reserved for royalty only. In the meantime 

Those plantation workers brought Shave Ice and those Original Flavors along with them when they came to work in Hawaii's sugar plantations. In our opinion, they were the true "inventors" of the shave ice we all have come to enjoy today. They experimented with flavors and flavor combinations, toppings, fresh fruit, ice cream and yes, even cotton candy

As the next few summer temperatures continue to rise, so will our cravings for shave ice treats to beat the heat. Although shave ice may seem like a simple combination of syrup and ice, there is a colorful and rich history behind the many varieties of shave ice (shaved ice) that the world consumes each summer.

  • 1869-1870The modern form of authentic  Hawaiian shave ice we know and love today is believed to have been invented in the port town of Yokohama, Japan. We also are aware of shave ice and it's orgins in tiawan as early as the 7th century ad.

  • 1892 - By this time Shave Ice had already began to fill the islands of Hawaii. it olnly took 2 years!

  • 1919 [Jan. 30] - at the Dallas Texas state fair, state resident Samuel Bert, who was known by the locals as “Big King Sammie”, began selling the icy treats at the State Fair of Texas. 

  • 2006 - We begin our many trips to the Hawaiian islands, in search of the best authentic hawaiian shave ice

  • from matsimoto's to xx to xx, we would like to say we have tried all the Hawaiian shave ice these islands have to offer, but that would be an understatement. there are so many famous shave ice near me, and all across the world, we even found and visited a 350 year old shave ice stand/restaurant in japan, said to be the oldest in existence. all of the shave ice we tasted along our journey tasted so yummy!, and we learned so much about the shave ice community and it's early ties to Hawaii.

  • 2008 - Through our many hiking expeditions throughout the Hawaiian Islands, we take a side trail and stumble across this surfside Authentic Hawaiian shave ice shack and meet the Kameāloha family.

  • Snow cones are distinguished by the crunchy consistency of the crushed ice, with the flavored syrup collecting in the ice and the wax cone in which it is typically served. Snow cones are also a popular local treat in Hawaii, where they are called “shave ice” and are known for their signature flavor: rainbow.

  • Unlike snow cones, which are made with crushed ice and a conservative pouring of syrup, snowballs are made with shaved ice, giving them a fluffy, snow-like texture.  They are also doused with more syrup than traditional snow cones, which is absorbed by the finely powdered ice, so they are served in a cup and eaten with a spoon or straw.

1900 - Hawaii's authentic shave Ice tradition began in the early 1900's when Japanese immigrants started selling Kakigori, a sweetened shave ice, to Hawaiian plantation workers. at that time, they used a long flat blade and shaved the ice by scraping off thin slices of the ice from the block.

  • 1964 - On the other side of the us, the area of coney island is booming, and a desired bucket list of everyone surfing the waves in Malibu on the other side of the U.S - In 1964, Dan's Cotton Candy is formed in a corner store along with shave ice. 

  • 1920 - The following year in 1920, Sammie patented his ice crusher machine

a Shopkeeper named Steven Parker, born and bred in Kailua Hawaii, was one of the original shave ice vendor, selling these tasty treats at the Kailua General Store

Shave ice or Hawaiian shave ice is an ice-based dessert made by shaving a block of ice.

On the Big Island of Hawaii, the method we use is also referred to as 'ice shave', though both terms (ice shave and shave ice) are used by locals.

authentic Hawaiian Shave Ice looks very white due to its small water particles. the Added Flavored syrups are absorbed by the ice instead of surrounding it. There is rarely a need for a straw for a properly made shave ice product, since the flavors are in the ice and not at the bottom of the cup. 

Although the traditional American flavors are very common, Shave Ice in Hawaii is often flavored with local ingredients such as Guava, Pineapple, Coconut Passion Fruit, Li Hing Mui, Lilikoi, Kiwi Fruit and Mango. Hawaiian Shave Ice is traditionally served in a conical paper or plastic flower cup with multiple flavors, add a scoop of vanilla ice cream and/or Adzuki Bean Paste at the bottom of the cup, and perhaps some chopped fresh fruit & Tajin to top it off. 

Sweetened condensed milk drizzled over the top is sometimes called a "snow cap". This style of shave ice is common on the north shore of Oahu, as well as on Maui and the Big Island of Hawaii (where it is called "Japanese style").

The Hawaiian islands and Authentic Hawaiian shave ice has always been our second home.

That's pretty much a short history of how it all started. At Hu'i Hu'i Shave Ice, we hold strong to that original culture, those Hawaiian values, and make delicious treats that make you remember your best vacation. Our business has been carried on by our family with pride.

Upon recently purchasing Hu'i Hu'i from it's original owner in 2018, our mission was to bring Authentic Hawaiian Shave Ice Flavors from Hawaii to California and in doing so, we can keep this Original Hawaiian Style Tradition alive for generations to come.

rich in history

1950's his stand at the state fair was selling an estimated 1 million snow cones per year.

Throughout our early years of travels throughout the Hawaiian islands in search of the best Authentic Flavors, our search kept leading us back to a little surfers village just outside of Honolulu.

  After finding this small family run local shave ice business, just off the surf line, on any given day that small village shave ice hut had customers waiting in line as far as the eye can see. We traded stories back and forth, and our new family friendship began.

    a few years later. On our third or forth time of travels to the big island, we began to talk about them being able to create these authentic flavors in concentrate form, and help us sell them back home to California. We have been the exclusive sellers for this authentic flavor line, and on that handshake and subsequent celebration luau, we heard the name hu'i hu'i and asked of it's meaning. it means to live cool.

The rest is history 

After several years of dedication to the local shave ice industry and it's most requested flavors, we have found our

Top 12 Flavors, and we will always bring along some others from our 125 flavors shop for additional fun at your event.

In 2020, our hope is attend larger events where we can create shave ice treats for all. 

Recently, one of the children in the Hui Hui Shave Ice Family purchased Dan's Cotton Candy®, A Coney Island based company established in 1964. In the transporting of the three kiosks that were purchased, the seller shipped our treasures to us, and when they arrived, we only got 2 and they both arrived severely damaged, and one got stolen on the way!

This, our version of a very bad, no good, horrible day has delayed our roll out of Dan's Cotton Candy a while now...

The restoration of one Final Remaining Dan's Cotton Candy kiosk known to exist is nearly complete, and the Patent (which was also purchased) has been transferred successfully for this unique method of delivering Cotton Candy, and we are excited to soon offer this service in our area.

Ideally, we are looking for a permanent setting at a location such as an Amusement Park, Outdoor Mall type of placement. Goes great during the holidays. "My goal is to attempt a Guinness Book World Record for the largest Cotton Candy ever made. My dad and I have looked through the last few years of The Guiness Books in our nightly reading, and we don't see an entry for the Largest Cotton Candy ever made. So we thought, why not enter one?." With this method of Cotton Candy delivery, we have already made Cotton Candy in the height range of  5-6.8 feet in height. We are shooting for the next range to be in the 7-9 foot height, so watch for us. 

There may be a great opportunity for a local school to have some fundraising events around the time when we are creating our treats, contact us and let us know how we can support each others cause.
